Fuyu Persimmons are small and squat and are non-astringent which means they can be eaten hard like an apple. There are many varieties of persimmons but many are sold as Fuyus. The larger counterpart of this variety is the Giant Fuyu.
Hachiya Persimmons have an acorn shape and tend to be more orange than Fuyu Persimmons. They are astringent which means they need to be really soft to eat (must have a jelly like consistency). They are typically used for baking and cooking.
